Is it a cookie? Is it candy? Who cares!?! Because these Peppermint Meringues melt in your mouth! Thanks to my mother, this Peppermint Meringues recipe has been enjoyed by our family for years. We love them, my daughters love them, and now my grandkids love them! Easy and delicious, they’re great for gift giving!
The secret is patience. First, you must beat 2 egg whites (along with 1/8 tsp each of salt and cream of tartar) to soft peaks when beaters are lifted. Then, gradually beat in 1/2 cup granulated sugar until mixture is very stiff, smooth, and glassy – about 5-6 minutes.
Bake 1 1/2 hours in 225 degree oven. Meringues should look dry and white. Turn off the oven, but keep the oven door ajar and let meringues cool. These delicious Peppermint Meringues will keep for up to 2 months (not at our house!) when stored loosely covered in a cool dry place.
